2 cups all-purpose flour
1/4 cup sugar
2 teaspoons baking powder
1/2 teaspoon salt
1/4 cup unsweetened applesauce
1 egg
2/3 cup milk
2 cups peeled, cored, diced red apples
1/2 cup firmly packed brown sugar
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
2 tablespoons butter, melted
1/2 cup chopped walnuts
Sift dry ingredients; stir in applesauce. Add egg and milk. Add one cup of diced apples. Barely mix. Pour into a greased 8” round cake pan. Lay remaining cup of apples over the top. Sprinkle with brown sugar, spices and walnuts. Drizzle melted butter over the top. Bake at 400 degrees for 25 minutes. Serve warm.
