Tiny Apple Pies


These are not difficult to make, but they do take a lot of time.
  • 1 box Pillsbury pie crusts, (2 crusts)
  • Filling:
  • 6 cups red cooking apples, finely chopped (2-1/4 lbs)
  • ¾ cup sugar
  • 2 tablespoons flour
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • Topping:
  • 1 cup rolled oats
  • 1 cup packed brown sugar
  • ½ cup flour
  • ½ teaspoon ground cinnamon
  • ½ cup butter or margarine

1. In a medium bowl,for the filling, stir together sugar, flour, cinnamon and nutmeg. Add apple and toss until coated. Set aside.
2. In a second bowl, for the topping, mix together oats, flour brown sugar and cinnamon. Cut in butter until mixture resembles coarse crumbs. Set aside.
3. Roll out pie crust dough to 1/16" thickness. Use a 3" round pastry cutter to cut out 20-25 rounds per packaged crust.
4. Wrap each circle around a floured shot glass, or item similar in size, to make a form that can be filled. Place each form into a muffin tin. Fill halfway with apples, top with crumb topping.
5. Bake 28 minutes at 375 degrees. Remove from muffin tin while warm and cool on wire racks.

Makes 40-50 mini pies.
