Reduced Fat Scones

I have used this recipe as a basic scone recipe and have easily adapted from it.
  • 2-½ cup all purpose white flour
  • 4 teaspoons baking powder
  • 1-½ tablespoon granulated sugar
  • ¼ teaspoon salt
  • 5-½ tablespoons light butter
  • 2 egg whites, (or 1/2 cup Eggbeaters)
  • 6 ounces nonfat fruit yogurt
  • turbinado sugar, for decorating

Preheat oven to 400°. Combine first 4 ingredients in a medium bowl; cut in cold butter until mixture resembles small peas. Combine egg and yogurt in a small bowl; stir well with a whisk. Add to flour mixture; mix well. 
Turn dough onto a floured surface; knead several times. You may need to add extra flour if dough is too sticky. Form into a ball and flatten into a circle. Cut into 8 pieces. Brush tops with milk (or spray with non-stick spray) and sprinkle with sugar. Transfer pieces onto a greased cookie sheet. Bake for 12-14 minutes.

Notes:
1. Optional 1/4 cup flaxseed meal can be added and butter can be reduced to 4 tablespoons.
2. I melt the butter rather than "cut in cold butter".
3. I like to add in fresh or frozen fruit. You'll need to add more flour until dough is easy to handle.
