Stuffed Pork Chops

  • ½ lb pork chop per person, cut 1-1/2 inch thick
  • 1 box Stove Top stuffing
  • 1 apple, cored & diced
  • ¼ cup raisins
  • ¼ cup walnuts, chopped (optional)
  • apple cider or juice
  • apple jelly
  • spicy brown mustard
  • toothpicks

Cut pocket into pork chop in the fatty boneless side. Preferably, get your grocery store butcher to do it for you.
Make stuffing according to microwave directions, substituting apple cider or juice for water. Add apples, raisins and walnuts to stuffing and mix well.
Stuff lots of stuffing into pocket in pork chops. Secure opening with toothpicks. Coat the outside of chops with apple jelly and spicy mustard. Place chops in a 9x13 baking pan with sides.
Bake for an hour at 350°.
